DAY 29- CAULIFLOWER FRIED RICE

A tasty option waiting to reintroduce rice in the diet!

INGREDIENTS

4 slices bacon, chopped

200 gr of kimchi, chopped

1 medium size cauliflower, grated on a box grater on the larger hole side, or pulse chopped in a food processor

sesame oil

1 inch knob of ginger, peeled and grated

4 spring onions 

1 bunch chopped coriander 

black and white sesame seeds (optional)

2 eggs

                             INSTRUCTIONS

  1. In a large pan over medium low heat, add chopped bacon and cook until crisp. Set aside on a paper towel to drain.

  2. Turn heat off and carefully add kimchi with juices to the melted bacon fat. Turn heat to medium high and cook for 5-8 minutes or until kimchi is warm and juices have thickened. Add chopped cauliflower , ginger and cook for about 5 minutes.

  3. Meanwhile break the eggs in a bowl and add salt and pepper, stir them quickly in the hot pan with the other ingredients, max 2 min at high heat, to create a fluffy scramble. 

  4. Add spring onions and coriander to fried rice and taste for seasoning. Sprinkle with sesame seeds and top each portion with an egg and reserved bacon. Serve immediately.
